Tastes of our Town: Bivver in the Sheraton Hotel Newfoundland
For those of you who didn’t know, the Sheraton Hotel Newfoundland has been undergoing some major changes and renovations. Formerly the Fairmont Hotel, the Sheraton has made a lot of positive changes and people are noticing. Transforming one of the hotel’s former dining areas into a modern and contemporary lounge called Bivver, the hotel is now a destination spot for tourists and locals alike.
The name is derived from the Newfoundland word “bivver” which means to shiver, tremble or shake, especially with the cold. However, it’s my guess that bivver will start to take on a new meaning to guests of this lounge. The décor offers the most unique atmosphere in the city. With the only circular bar in St. John’s, Bivver is divided in two concentric rings, with the bar separated from the lounge area by open wooden railings that create multiple seating areas. The newly renovated bar is modern and sleek with a beautiful dark granite bar top. The lounge’s soft lighting and warm green tones create a relaxed and sophisticated atmosphere to enjoying drinks or dining.
Bivver, much like the Sheraton Hotel Newfoundland is an upscale, casual, gathering place. Their tag “Taste, Savour, Linger” is a true reflection of the balance they have achieved with their menus. Bivver is not only a lounge but a tasting bar where you can enjoy drinks, a few appetizers or a full meal. I highly recommend giving their signature martini, the Bivver Shivver, a try! A delicious and refreshing blend of fruit juice with vodka and liqueur that provides a delightful, refreshing experience. I also had the pleasure of ordering from the ‘Bites’ portion of their menu which allows you to sample some of the unique flavours that are perfect for sharing. Bivver hasn’t forgotten the classics though and the menu includes fish and chips, an Angus burgers and Ciabatta chicken club proving it’s not what you do but how you do it. The dessert menu provides solo, duo or trio portions which encourages dinners to mix and match according to their palate while being able to share with their guests.
Executive Chef Roary MacPherson was the mastermind behind the menu and has certainly provided a menu worth talking about. The new menu truly complements the space with an emphasis on local, organic and sustainable choices with more options for portions. Bivver provides an opportunity for tasting but also the option for a full meal with appetizers and dessert. With a strong importance on presentation and balanced portions for menu options, and a wine menu that allows more choice (3oz and 5oz servings) with 10 beers on tap- we’re sure you’ll find something to enjoy with friends while you linger and enjoy the experience of Bivver!
